Easy Vegetable Snack

Chickpea Flour (1 cup)
Red Pepper and Cumin Seeds (whole/ground 1 tsp)
Potato (1 medium)
Onion (1 Medium)
Salt (1/2 tsp)
Water (1 1/4 cup)

Mix the flour, water, spices and salt together using a whisk (smooth). Use mandolin to slice the vegetables into 1/4 inch thickness. Dip potatoes into batter and deep fry in oil using another saucepan/fryer on medium high heat. Fry for about a minute or two minutes or till light brown.
Can also substitute using other vegetables such as cauliflower, zucchini, green peppers.

Thai Rainy Day Soup

Shrimp or Scallop (1/4 lb)

Rice Noodles (1 bunch)

Water (2 – 3 cups)

Tom Yum Paste (Hot and Sour) (1 tbs.)

Vegetables (cabbage, bean sprouts, button mushrooms)

In a soup dish bring water to a boil. Add Tom Yum Paste, rice noodles, chopped vegetables and shrimp. Cook for about two minutes or until noodles are done. Adjust with more water if soup is spicy. 

This is a meal in itself and is quick and easy. Ingredients listed can be found at oriental stores.

Great for Valentine’s Day!

The crab meat comes in a container (in lump) and is enough to make about 4 -6 cakes. Just add a 1/2 tsp. of mixed spices or just 1/4 tsp. pepper, pinch of salt and 1/4 tsp lime juice. Beat an egg and add to lump crab and mix. Form balls and flatten a little as seen above. Dip in seasoned flour. Pan fry in little oil for about two or three minutes on each side. 

 

Serve with spaghetti or salad.
Tartar Sauce – Blend 2 tbsp. of Mayonnaise and 1 tsp. hot sauce. Enjoy with crab cake.

My husband was gifted the preserved figs by a customer. The figs are really sweet but go well with plain yogurt and nuts for a healthy breakfast.

Ice cream Cookie Sandwich

Chocolate Chip Cookies (2 for each sandwich)

Vanilla Bean Ice Cream (Scoop) Store bought – quick and easy preparation.

Scoop vanilla ice cream on chocolate cookie and cover with the other cookie.

Ribs and Coleslaw

Baby Back Ribs (1 or 2 racks)

Barbeque sauce (1 1/2 cups)

Salt and Pepper 

 

Apply salt and pepper to the meat. Add sauce liberally on both sides. Use a little oil in open pan or large dish and cook for about two  minutes on each side to get a brown color. Take the ribs out and place in a baking pan.  Bake in 375 degree oven for about 45 minutes to an hour. Serve with coleslaw.

Coleslaw recipe

Cabbage (2 cups)

Carrot (1 cup)

Mayonaise (1 cup)

Sour cream (1/2 cup)

Salt and Pepper (1/2 tsp each)

Sugar or honey(1 tsp)

Grate or shred cabbage and carrot. Mix in a big bowl. Add salt, pepper. Mix mayonnaise sour cream and sugar in a different bowl with a egg whisk or fork. Add to shredded cabbage and mix again. Taste – add more sugar or salt if necessary.
